  • 2 chicken breasts
  • 1/4 C red wine
  • 3 T olive oil
  • 1 t dry rosemary leaves
  • 1 t dry parsley leaves
  • 1/4 t garlic powder
  • 1/4 t salt
  • 2 T maple syrup or honey
  • 1/2 T flour
  • 1 mango cut into 1/2 inch chunks
  • salt and pepper to taste

Combine the listed ingredients from red wine to maple syrup. Place chicken in the marinade and turn to coat. Allow the chicken to marinate at room temperature for 20 minutes, turning once halfway through the time. Remove the chicken breasts to a broiler pan and season both sides with salt and pepper. Broil the chicken breasts 8 inches from the heat for approximately 6 minutes on each side or until golden brown. Bake the chicken in a 350-degree oven for about 15 minutes more or until a meat thermometer registers 160 degrees at the center of the breasts. Baking time will vary depending on the thickness of the pieces of chicken used. Meanwhile, heat the marinade over medium-high heat until it begins to boil. Reduce heat to medium and allow the liquid to reduce by approximately 1/2. Sift in the flour and stir the sauce until thickened. Add the mango. Cook for 2 minutes more and remove from heat. Place cooked chicken breasts on a plate and pour the sauce over the top. Serve.
