Chicken and Bacon Skewer Recipe
- 4 Chicken Breasts
- 12 Rashers of Rindless Streaky Bacon Your preference will determine whether you use cured Bacon or not
- 8 x 10inch Skewers If you are using wooden or bamboo skewers soak in water for 1 hour before use
Cut each Chicken Breast into 12 even sized cubes.
Place one of the Bacon rashers flat onto a cutting board.
Then with the flat blade of a heavy knife, press the Bacon rasher from one side to the other, this will stretch the bacon, to enable you to wrap 4 cubes of Chicken.

Take one cube of Chicken and roll it in the Bacon until the Bacon overlaps, enough for you to skewer it securely, then slice through to cut it off, place it on a plate to one side.
Repeat this until all your Chicken cubes are wrapped in the Bacon.
Now push 6 pieces of the Chicken and Bacon wraps onto each skewer, leaving a small space between each, This helps ensure a crispy result.
